I am not aware of any piano adaptations other than the 7/8 keyboard, which has slightly narrowerer keys than normal, therefore reducing some strain on the hands. Most pianists who become injured play conventional intruments but with only one hand (thus the 'one-handed' piano repertoire.) You can read about the 7/8 keyboard in the article cited here:
